Beet juice contains nitrates that can increase muscle blood flow and reduce blood pressure. British researchers from the University of Exeter found that supplementing with beet juice for periods ranging from one to 15 days (0.5 L per day) reduced blood pressure and submaximal exercise oxygen consumption during an incremental exercise test to exhaustion. Nitrates are harmless but can be converted to nitrites in the stomach, which can cause cancer. Nitrates are often used as preservatives in hot dogs and processed meats, and are not recommended as supplements for bodybuilders or endurance athletes.
